This recipe was inspired by the Diabetes Forecast Magazine.

Step 1: Soak Wooden skewers in water for at least 5 minutes.

Step 2: Make Fish Marinade. Combine ingredients and mix well.
1 tbsp paprika
1 cup plain, low fat Greek yogurt
2 tsp Grated ginger
1 tsp sea salt
1 tbsp tomato paste
1/4 tsp honey
1 tbsp dijon mustard
juice from 1 lemon

Step 3: Cut up fish into cubes. (Salmon, Tuna, Swordfish, any firm fish)
Also cut up a red onion, Green & red bell pepper into cube slices as well.

Step 4: Place fish, onion, bell peppers into marinade for at least 2 hours in fridge.

Step 5: Build skewers, alternating fish, onion, fish, bell pepper, etc.
Glaze with left over marinade

Step 6: Time to cook. You can grill these skewers for about 6 minutes on each side.
Or you can bake them at 350 for 10 min on each side.
